Lithuanian Potatoes In Sour Cream

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 4 medium potatoes, sliced
  • 2 slices thin cut bacon, chopped
  • 2 medium onions, peeled and chopped
  • 1/3-1/2 cup sour cream, at room temperature
  • salt and pepper
  • 2 tablespoons chopped fresh dill or 2 tablespoons parsley

Recipe

  • 1 peel and slice potatoes.
  • 2 cook in salted, boiling water til tender.
  • 3 drain.
  • 4 while they're cooking, fry bacon and onion til onion is tender.
  • 5 mix in cream, salt and pepper.
  • 6 add potato and bacon mixture.
  • 7 toss.
  • 8 serve warm, garnished with dill or parsley.
