Spicy Sweet Potato Spears

Ingredients

- 1/3 cup barbecue sauce (diana, spicy or original)
- 1 teaspoon all-purpose flour
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 2 sweet potatoes, peeled and cut into wedges
- 1/4 cup light mayonnaise
- 1/4 teaspoon lime zest
Recipe
- 1 preheat the grill to medium.
- 2 measure out the bbq sauce and remove 1 tablespoon and reserve. combine the remaining sauce with the flour, chili powder and salt. toss with the sweet potatoes.
- 3 lay the sweet potato wedges, two deep, in a row on a large piece of heavy-duty foil. fold over the foil and seal tightly.
- 4 cover the grill and cook the packet, turning often, for 30 minutes or until the potatoes are tender and well browned.
- 5 stir the reserved sauce with the mayonnaise and lime zest. serve with the potato wedges.
