Spicy Green Beans

Ingredients

- 4 slices bacon, cut into 1-inch pieces
- 1 onion, halved and sliced
- 2 lbs fresh green beans, tipped and washed
- 1 cup boiling water
- 3 tablespoons vinegar
- 3 tablespoons butter
- salt
- cayenne pepper
- 1/2 lemon, juice of
Recipe
- 1 cook bacon in skillet until crisp. drain bacon and set aside, leaving drippings in skillet.
- 2 add onions and sauté until just tender.
- 3 add green beans and sauté over medium heat for 2 minutes, stirring frequently.
- 4 add boiling water to pan and cover. cook for about 10 minutes or until beans are just tender.
- 5 when tender, remove lid and turn up the heat a little higher and cook until remaining water is mostly gone.
- 6 add vinegar, butter, salt, and cayenne, to taste, and stir.
- 7 add bacon right before serving.
- 8 garnish with a squeeze of lemon.
