Spicy Green Beans

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 4 slices bacon, cut into 1-inch pieces
  • 1 onion, halved and sliced
  • 2 lbs fresh green beans, tipped and washed
  • 1 cup boiling water
  • 3 tablespoons vinegar
  • 3 tablespoons butter
  • salt
  • cayenne pepper
  • 1/2 lemon, juice of

Recipe

  • 1 cook bacon in skillet until crisp. drain bacon and set aside, leaving drippings in skillet.
  • 2 add onions and sauté until just tender.
  • 3 add green beans and sauté over medium heat for 2 minutes, stirring frequently.
  • 4 add boiling water to pan and cover. cook for about 10 minutes or until beans are just tender.
  • 5 when tender, remove lid and turn up the heat a little higher and cook until remaining water is mostly gone.
  • 6 add vinegar, butter, salt, and cayenne, to taste, and stir.
  • 7 add bacon right before serving.
  • 8 garnish with a squeeze of lemon.
