- 2 eggs
- 1 small onion, chopped
- 1 big tomato, cut in small pieces
- 2 tablespoons olive oil
- salt and pepper
- feta cheese, crumbled
- parsley
Recipe
- 1 in a small skillet over medium heat saute the chopped onion in the olive oil.
- 2 in a bowl whisk the eggs and add them into the skillet along with the chopped tomato and season to taste. mix well and cook until the juices evaporate.
- 3 transfer to a plate and serve topped with crumbled feta cheese and parsley.
