Spinach El Greco

Total Time: 23 mins Preparation Time: 10 mins Cook Time: 13 mins

Ingredients

  • Servings: 2
  • 1 cup sweet onion, chopped
  • 2 italian plums, tomataoes chopped
  • 1/2 cup mushroom, sliced (optional)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • salt & pepper
  • 4 cups fresh spinach, washed & drained well
  • 1/2 cup sliced almonds

Recipe

  • 1 use a non stick skillet and brown your onions until golden. use a bit of oil if you wish. medium heat apprx 10 minutes.
  • 2 add mushrooms, if using, cook 2 minutes.
  • 3 add your tomatoes, cook 2 minutes.
  • 4 add thyme, oregano, salt & pepper.
  • 5 add spinach,cover, lift lid after 1 minute and flip the spinach, replace lid
  • 6 do this one more time -sprinkle in the almonds- your spinach will be wilted and ready.
