Farmer's Frittata

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 2 tablespoons olive oil
  • 2 potatoes, diced into 1 cm chunks
  • 2 slices bacon, diced
  • 6 eggs
  • 3 tablespoons chopped parsley
  • 1 teaspoon butter
  • salt and pepper

Recipe

  • 1 heat oil in heavy pan.
  • 2 add potatoes and bacon.
  • 3 cook over a medium heat 5- 7 minutes until potatoes are tender.
  • 4 drain well on paper towel.
  • 5 lightly beat eggs in a large bowl.
  • 6 add salt and pepper.
  • 7 mix in the parsley.
  • 8 tip the potato mixture into the eggs and mix well to combine.
  • 9 melt a butter in a frypan, pour in the mixture and cook over a low heat until nearly set.
  • 10 place under a pre-heated grill and cook the top of the omelette until golden and set.
