Farmer's Frittata

Ingredients
- Servings: 4
- 2 tablespoons olive oil
- 2 potatoes, diced into 1 cm chunks
- 2 slices bacon, diced
- 6 eggs
- 3 tablespoons chopped parsley
- 1 teaspoon butter
- salt and pepper
Recipe
- 1 heat oil in heavy pan.
- 2 add potatoes and bacon.
- 3 cook over a medium heat 5- 7 minutes until potatoes are tender.
- 4 drain well on paper towel.
- 5 lightly beat eggs in a large bowl.
- 6 add salt and pepper.
- 7 mix in the parsley.
- 8 tip the potato mixture into the eggs and mix well to combine.
- 9 melt a butter in a frypan, pour in the mixture and cook over a low heat until nearly set.
- 10 place under a pre-heated grill and cook the top of the omelette until golden and set.
