Fresh Cherryade

Ingredients

- 400 g fresh cherries
- 50 g caster sugar
- 1 sprig fresh tarragon
- 2 limes, juice of
- 600 ml soda water
Recipe
- 1 place the cherries, sugar and tarragon in a small pan with 450ml of water. gently bring to the boil, stirring until the sugar dissolves, then simmer for 10 minutes until the cherries are very soft.
- 2 remove from the heat, then pass through a sieve to remove the stones and tarragon and puree the cherries. stir in the lime juice, then chill until ready to serve.
- 3 transfer to a jug and top up with soda water. pour into ice filled glasses and served garnished with lime twists and fresh cherries.
