Fresh Cherryade

Ingredients

  • Servings: 4
  • 400 g fresh cherries
  • 50 g caster sugar
  • 1 sprig fresh tarragon
  • 2 limes, juice of
  • 600 ml soda water

Recipe

  • 1 place the cherries, sugar and tarragon in a small pan with 450ml of water. gently bring to the boil, stirring until the sugar dissolves, then simmer for 10 minutes until the cherries are very soft.
  • 2 remove from the heat, then pass through a sieve to remove the stones and tarragon and puree the cherries. stir in the lime juice, then chill until ready to serve.
  • 3 transfer to a jug and top up with soda water. pour into ice filled glasses and served garnished with lime twists and fresh cherries.
