Spinach & Mushroom Pizza With Goat Cheese

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 prepared pizza crust
  • 4 tablespoons olive oil
  • baby spinach, 1 bag
  • 1 lb wild mushroom, fresh
  • 1 cup plum tomato, diced
  • 11 ounces goat cheese, chavrie freshlog
  • 1 cup plum tomato, diced

Recipe

  • 1 preheat the oven to 400 degrees f.
  • 2 lightly brush pizza shell with olive oil.
  • 3 pour remaining oil into a medium skillet over medium heat.
  • 4 slice and sauté the mushrooms until tender.
  • 5 add spinach and sauté only enough for the spinach to wilt.
  • 6 season with salt and pepper.
  • 7 spread the mushroom and spinach mixture over the pizza shell.
  • 8 slice the chavrie log into 1/8 inch slices and lay evenly on top of the pizza.
  • 9 top the pizza with the diced tomatoes.
  • 10 bake in the oven until golden brown and the pizza edges begin to crisp.
  • 11 cut pizza and serve.
  • 12 pizza can be drizzled with additional olive oil after removing from the oven.
