Lemon Meringue Pie

Ingredients
- 40 vanilla wafers
- 5 tablespoons butter, melted
- 1 tablespoon sugar
- 1 1/2 cups sugar
- 1/3 cup cornstarch
- 1 pinch salt
- 1 1/2 cups water
- 4 eggs, separated
- 1/2 cup lemon juice
- 1 tablespoon lemon zest
- 1 tablespoon butter
- 1/4 teaspoon cream of tartar
- 1 teaspoon vanilla
Recipe
- 1 crush wafers, add butter and sugar. press in bottom of 9" pie plate. set aside.
- 2 beat egg yolks. set aside.
- 3 in saucepan, mix 1 cup sugar, cornstarch and salt. stir in water.
- 4 cook and stir over medium heat until thick and boiling. remove from heat. temper in egg yolks, return to heat and simmer 2 minutes.
- 5 remove from heat again and stir in lemon juice, lemon zest and butter. pour into crust.
- 6 beat egg whites and cream tartar until frothy. beat in sugar and vanilla until stiff peaks. spoon on top of pie.
- 7 bake in 400 degree oven 10 minutes until lightly brown.
- 8 cool and chill.
