Lemon Meringue Pie

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • 40 vanilla wafers
  • 5 tablespoons butter, melted
  • 1 tablespoon sugar
  • 1 1/2 cups sugar
  • 1/3 cup cornstarch
  • 1 pinch salt
  • 1 1/2 cups water
  • 4 eggs, separated
  • 1/2 cup lemon juice
  • 1 tablespoon lemon zest
  • 1 tablespoon butter
  • 1/4 teaspoon cream of tartar
  • 1 teaspoon vanilla

Recipe

  • 1 crush wafers, add butter and sugar. press in bottom of 9" pie plate. set aside.
  • 2 beat egg yolks. set aside.
  • 3 in saucepan, mix 1 cup sugar, cornstarch and salt. stir in water.
  • 4 cook and stir over medium heat until thick and boiling. remove from heat. temper in egg yolks, return to heat and simmer 2 minutes.
  • 5 remove from heat again and stir in lemon juice, lemon zest and butter. pour into crust.
  • 6 beat egg whites and cream tartar until frothy. beat in sugar and vanilla until stiff peaks. spoon on top of pie.
  • 7 bake in 400 degree oven 10 minutes until lightly brown.
  • 8 cool and chill.
