Dixie Crossroads Corn Fritters

Ingredients

  • Servings: 4
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 4 tablespoons white sugar
  • 2 large eggs (beaten)
  • 1 cup milk
  • 4 tablespoons melted butter
  • 1 cup whole corn, from a tin (drained)
  • icing sugar, as needed

Recipe

  • 1 in a large pot or deep fryer, heat your preferred oil to deep fry with to approximately 350 degrees f.
  • 2 in a mixing bowl, sift together the flour, baking powder, salt, and sugar.
  • 3 in a separate bowl, combine beaten eggs, milk, and butter.
  • 4 whisk egg mixture into dry ingredients; stir in corn last.
  • 5 drop by tablespoonfuls into hot oil; deep fry about 5 minutes, or until fritters are golden brown.
  • 6 sprinkle with icing sugar and serve as soon as possible; best when served very warm.
