Mushrooms Vittoria

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • Servings: 6
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 6 garlic cloves, large, flattened
  • 1 1/4 lbs mushrooms, halved, quartered if very large
  • 1 cup dry wine
  • salt
  • pepper
  • fresh italian parsley, shopped

Recipe

  • 1 melt the butter and the oil in a heavy large skillet over medium-high heat.
  • 2 add garlic and saute until beginning to brown, about 2 minutes.
  • 3 using a slotted spoon remove and discard garlic.
  • 4 add mushrooms and saute until golden brown and the juices evaporate, about 15 minutes.
  • 5 add wine and simmer until reduced to glaze on mushrooms, stirring occasionally, about 10 minutes,.
  • 6 season mushrooms with salt and pepper; add parsley and serve.
