Mushrooms Vittoria

Ingredients

- 2 tablespoons butter
- 2 tablespoons olive oil
- 6 garlic cloves, large, flattened
- 1 1/4 lbs mushrooms, halved, quartered if very large
- 1 cup dry wine
- salt
- pepper
- fresh italian parsley, shopped
Recipe
- 1 melt the butter and the oil in a heavy large skillet over medium-high heat.
- 2 add garlic and saute until beginning to brown, about 2 minutes.
- 3 using a slotted spoon remove and discard garlic.
- 4 add mushrooms and saute until golden brown and the juices evaporate, about 15 minutes.
- 5 add wine and simmer until reduced to glaze on mushrooms, stirring occasionally, about 10 minutes,.
- 6 season mushrooms with salt and pepper; add parsley and serve.
