Lovely Lemon Meringue Pie

Ingredients
- 3 tablespoons cornstarch
- 1 1/4 cups sugar
- 1/2 cup lemon juice
- 1 tablespoon lemon rind
- 3 eggs, seperated
- 1 1/2 cups boiling water
- 1 pie shell
- 6 tablespoons sugar
Recipe
- 1 combine the cornstarch, 1 1/4 of a cup of sugar, lemon juice and lemon rind.
- 2 seperate the eggs and beat the egg yolks. add to lemon mixture.
- 3 in a sauce pan over medium heat, gradually add boiling water. heat the mixture to a gentle boil and continue for 4 minutes.
- 4 add the mixture to the pie shell.
- 5 for meringue: beat the egg whites using a mixer until stiff, then beat in the remaining 6 t of sugar.
- 6 spread the meringue over the hot pie. be sure to seal the edges with mergingue.
- 7 bake at 425 degrees in a hot oven for 4-5 minutes or until the tips of the meringue are golden brown.
- 8 let cool and serve cold.
