Lovely Lemon Meringue Pie

Total Time: 25 mins Preparation Time: 20 mins Cook Time: 5 mins

Ingredients

  • 3 tablespoons cornstarch
  • 1 1/4 cups sugar
  • 1/2 cup lemon juice
  • 1 tablespoon lemon rind
  • 3 eggs, seperated
  • 1 1/2 cups boiling water
  • 1 pie shell
  • 6 tablespoons sugar

Recipe

  • 1 combine the cornstarch, 1 1/4 of a cup of sugar, lemon juice and lemon rind.
  • 2 seperate the eggs and beat the egg yolks. add to lemon mixture.
  • 3 in a sauce pan over medium heat, gradually add boiling water. heat the mixture to a gentle boil and continue for 4 minutes.
  • 4 add the mixture to the pie shell.
  • 5 for meringue: beat the egg whites using a mixer until stiff, then beat in the remaining 6 t of sugar.
  • 6 spread the meringue over the hot pie. be sure to seal the edges with mergingue.
  • 7 bake at 425 degrees in a hot oven for 4-5 minutes or until the tips of the meringue are golden brown.
  • 8 let cool and serve cold.
