Marmalade-glazed Carrots

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 5
  • 1 lb baby carrots, scrubbed
  • 1 tablespoon butter or 1 tablespoon margarine
  • 1/4 cup orange marmalade
  • 1 teaspoon ground ginger
  • 1/8 teaspoon ground nutmeg
  • 1 tablespoon chopped parsley
  • salt and pepper

Recipe

  • 1 in a 10 inch frying pan over high heat, add water and carrots.
  • 2 cover and bring to a boil then reduce heat to medium-high heat.
  • 3 cook carrots for about 8 minutes or when fork tender.
  • 4 don't forget to stir during cooking.
  • 5 drain carrots.
  • 6 return carrots to pan over high heat.
  • 7 add butter, orange marmalade, ginger, and nutmeg.
  • 8 stir often until marmalade mixture clings to carrots, 5 to 6 minutes.
  • 9 sprinkle with parsley and add salt and pepper to taste.
