Spinach With Roasted Sesame Seed Dressing

Ingredients

- 1/3 cup sesame seeds
- 1 teaspoon sugar
- 1 1/2 teaspoons soy sauce
- 1/4 cup dashi
- 600 g spinach, trimmed
Recipe
- 1 toast the seeds in a dry, small frying pan over a medium heat.
- 2 set 1 tsp of the seeds aside and blend, process or grind the rest until smooth.
- 3 mix with sugar, sauce and dashi in a jar and shake well until sugar dissolves.
- 4 wash spinach well.
- 5 bring a saucepan of water to a boil and immerse the spinach for 30 seconds.
- 6 drain and rinse under cold water.
- 7 wrap the leaves in a bamboo mat, roll firmly and gently squeeze out the extra water.
- 8 place on a plate and top with the dressing.
