Spinach, Avocado & Cheese Quesadillas

Ingredients
- Servings: 4
- 1 (10 ounce) box frozen chopped spinach
- 1/2 avocado
- 1 1/2 tablespoons lime juice
- 1/4 teaspoon salt
- 4 flour tortillas (burrito-size)
- 2 tablespoons pickled jalapeno peppers, coarselychopped
- 1/4 cup cilantro, chopped
- 1 cup shredded low-fat cheddar cheese or 1 cup monterey jack cheese
Recipe
- 1 thaw spinach in a microwave or place it in a fine mesh strainer and run hot water over it. squeeze dry.
- 2 combine avocado, lime juice and salt in a bowl and mash together with the back of a fork.
- 3 working with 1 tortilla at a time, spread a thin layer of avocado over half.
- 4 top spread with 1/4 each of jalapeño, spinach, cheese and cilantro.
- 5 fold other half of tortilla over filling.
- 6 repeat until all ingredients are used.
- 7 heat a nonstick skillet over medium heat.
- 8 add a quesadilla and cook about 3 minutes on each side, or until it is browned lightly and cheese is melted.
