Salsa Ratatouille

Ingredients

  • Servings: 5
  • 1 large eggplant
  • 4 ounces fruit salsa (mango, raspberry, whatevers preferred, can probably use traditional salsa also)
  • 3 ounces cola

Recipe

  • 1 first peel and diced your eggplant in small cubes, and cook as usual in pan.
  • 2 on stovetop mix and heat in pan, pour in cola to partly caramelize the eggplant.
  • 3 add salsa of choice allowing to heat so eggplant absorbs the flavor.
  • 4 gets better as it sits!
