Ingredients

- 1 large eggplant
- 4 ounces fruit salsa (mango, raspberry, whatevers preferred, can probably use traditional salsa also)
- 3 ounces cola
Recipe
- 1 first peel and diced your eggplant in small cubes, and cook as usual in pan.
- 2 on stovetop mix and heat in pan, pour in cola to partly caramelize the eggplant.
- 3 add salsa of choice allowing to heat so eggplant absorbs the flavor.
- 4 gets better as it sits!
