Double Breaded Abalone Steaks

Total Time: 2 hrs Preparation Time: 2 hrs

Ingredients

  • Servings: 4
  • 1 lb abalone steak
  • 1/4 cup flour
  • 3 eggs
  • 1 dash dry
  • 3 cups ritz crackers
  • 1 teaspoon fresh ground black pepper
  • 1 dash white pepper
  • 1/2 cup olive oil

Recipe

  • 1 place ritz crackers (i use two sleeves of ritz), black and white pepper into ziplock bag.
  • 2 smash crackers into a powder and place into shallow bowl.
  • 3 place flour in seperate shallow bowl.
  • 4 blend eggs and in put into a 3rd shallow bowl.
  • 5 slice abalone into thin 1/4 inch steaks.
  • 6 place sliced abalone steaks on hard surface covered with saran wrap.
  • 7 tenderize both sides of steaks by pounding with meat hammer.
  • 8 coat both sides of one abalone steak with flour.
  • 9 dip the floured abalone steak in egg mixture.
  • 10 coat the egg dipped abalone steak with cracker crumbs.
  • 11 place double coated steak cookie sheet lined with wax paper.
  • 12 chill the breaded steaks for 1-2 hours (this keeps the breading from falling off when cooking).
  • 13 heat olive oil in pan on medium high heat until hot.
  • 14 add abalone steaks to the hot oil and cook on one side approximately 30-45 seconds.
  • 15 turn abalone steaks gently.
  • 16 cook for another 30 45 seconds.
  • 17 remove abalone steaks plate and layered with 4 or 5 paper towels to help absorb excess oil.
  • 18 serve hot and enjoy.
