Double Apple Spice Muffins

Ingredients
- 4 cups diced apples
- 3 1/2 cups whole wheet flour
- 5 teaspoons baking soda
- 2/3 cup splenda granular
- 1/2 cup egg whites or 1/2 cup egg beaters egg substitute
- 2/3 cup applesauce
- 1 cup skim milk
- 2 teaspoons cinnamon
- 1 teaspoon nutmeg
Recipe
- 1 combine flour, baking soda, and splenda in a large bowl and sift until fluffy.
- 2 mix milk, applesauce, cinnamon, nutmeg, and milk in a separate bowl.
- 3 slowly add liquid mix to the dry while constantly stirring. (it will be a thicker batter).
- 4 start to fold in the apples until even throughout batter.
- 5 srapy pam on a muffin pan and spoon the batter to the top of each cup for larger muffins. ( for smaller fill 3/4).
- 6 bake at 400 degrees for 20 minutes or until tops are golden.
- 7 let cool and enjoy!
