Double Apple Spice Muffins

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • 4 cups diced apples
  • 3 1/2 cups whole wheet flour
  • 5 teaspoons baking soda
  • 2/3 cup splenda granular
  • 1/2 cup egg whites or 1/2 cup egg beaters egg substitute
  • 2/3 cup applesauce
  • 1 cup skim milk
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg

Recipe

  • 1 combine flour, baking soda, and splenda in a large bowl and sift until fluffy.
  • 2 mix milk, applesauce, cinnamon, nutmeg, and milk in a separate bowl.
  • 3 slowly add liquid mix to the dry while constantly stirring. (it will be a thicker batter).
  • 4 start to fold in the apples until even throughout batter.
  • 5 srapy pam on a muffin pan and spoon the batter to the top of each cup for larger muffins. ( for smaller fill 3/4).
  • 6 bake at 400 degrees for 20 minutes or until tops are golden.
  • 7 let cool and enjoy!
