Doris' Shavuot Cheesecake

Ingredients
- 1 1/2 lbs farmer cheese
- 1 lb pot cheese
- 1/2 lb cream cheese
- 3/4 cup sugar
- 8 ounces butter
- 1 teaspoon vanilla
- 4 tablespoons sour cream
- 8 eggs, separated (beat the whites )
- 2 ounces raisins (optional)
- 2 large eggs
- 2 ounces butter
- 2 teaspoons baking powder
- 4 ounces orange juice
- 8 ounces sugar
- 1 teaspoon vanilla
- 3 -4 cups flour
Recipe
- 1 mix filling ingredients together
- 2 mix dough ingredients, roll dough very thin
- 3 grease pan with butter (i use lg 9x13 inch glass dish)
- 4 put thin dough on bottom and sides
- 5 add filling
- 6 cut thin dough and put strips criss-cross on top of filling
- 7 brush strips with oil to brown
- 8 bake, probably at least 1 hr--check to see if bottom dough is slightly brown
- 9 this freezes well; can make ahead.
