Spinach With Sweet Red Onion

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 10
  • 2 large red onions, halved and sliced (3 cups)
  • 2 tablespoons butter
  • 1 cup red wine
  • 1/4 cup grenadine or 1/4 cup boysenberry syrup
  • 2 tablespoons sugar
  • 1/4 teaspoon salt
  • 2 (5 ounce) packages fresh baby spinach (16 cups)
  • salt and black pepper

Recipe

  • 1 in a nonstick skillet cook the onions in hot butter for 5 to 8 minutes or until tender, stirring occasionally.
  • 2 add the wine, syrup, sugar, and salt.
  • 3 bring to boiling; reduce heat.
  • 4 boil gently, uncovered, about 15 minutes or until most of the liquid has evaporated and liquid is syrupy.
