Old-fashioned Indiana Strawberry Pie

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • 1 (9 inch) pie shells
  • 1 quart fresh strawberries
  • 1 cup sugar
  • 3 tablespoons cornstarch
  • 1/8 teaspoon salt
  • 1 teaspoon lemon juice
  • 2 teaspoons butter

Recipe

  • 1 rinse berries thoroughly, drain, remove stems. pat dry.
  • 2 crush enough of the berries to make 1 1/2 cups berry pulp and juice.
  • 3 combine the crushed berries and juice in a saucepan with the sugar, cornstarch, lemon juice and salt.
  • 4 bring to a boil, stirring constantly.
  • 5 cook until mixture thickens and turns clear.
  • 6 stir in butter and cook one more minute.
  • 7 arrange whole berries in baked pie shell.
  • 8 pour the hot berry mixture over them.
  • 9 let cool.
  • 10 chill several hours.
  • 11 serve with vanilla ice cream or top servings with whipped cream.
