Easy Cheddar Rice Casserole

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • Servings: 8
  • 1/4 cup onion, chopped
  • 4 garlic cloves, minced
  • 1/4 cup butter
  • 3 cups long grain rice (cooked)
  • 2 cups cooked chicken (optional) or 2 cups turkey (optional) or 2 cups ham, diced (optional)
  • 2 cups cheddar cheese, shredded
  • 1/2 cup fresh parsley, minced
  • 1 cup milk
  • 4 eggs, lightly beaten
  • 2 teaspoons worcestershire sauce
  • 1 teaspoon salt
  • 3/4 teaspoon black pepper

Recipe

  • 1 preheat oven to 350°f.
  • 2 melt butter in a large saucepan, and saute the onion and garlic in butter until tender.
  • 3 add remaining ingredients and mix well.
  • 4 pour into a shallow, greased 1-quart baking dish.
  • 5 bake uncovered until knife inserted near center comes out clean (40-45 minutes).
