Easy Carrot Pudding Cake

Total Time: 45 mins Preparation Time: 10 mins Cook Time: 35 mins

Ingredients

  • 1 (18 ounce) package yellow cake mix
  • 1 (4 ounce) package instant vanilla pudding
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 4 eggs
  • 1/3 cup water
  • 1/4 cup oil
  • 3 cups shredded carrots
  • 1/2 cup finely chopped raisins
  • 1/2 cup chopped pecans

Recipe

  • 1 combine cake mix, pudding mix, salt, cinnamon, eggs, water, and oil in a large bowl; beat at medium speed for 2 minutes, scraping side of bowl frequently.
  • 2 stir in carrots, raisins, and pecans.
  • 3 pour into 3 greased and floured 9-inch cake pans.
  • 4 bake at 350°f for 30 to 35 minutes or until layers test done.
  • 5 cool in pan for 10 minutes; remove and cool the rest of the way on wire racks.
  • 6 frost with your favorite orange frosting and garnish with pecan halves.
