Easy Canned Bean & Carrot Soup

Total Time: 40 mins Preparation Time: 5 mins Cook Time: 35 mins

Ingredients

  • Servings: 2
  • 1 (400 g) can of any white beans (or chickpeas)
  • 1 cup stock (vegetable or chicken)
  • 2 cups water
  • 1 cup onion (chopped finely)
  • 1 cup carrot (diced)
  • 1/2-1 tablespoon lemon juice
  • 1/2 teaspoon black pepper

Recipe

  • 1 combine beans, stock, water, onion and carrot and cook for 15minutes.
  • 2 add black pepper and lemon juice and cook a further 15-20minutes.
  • 3 serve.
