Dumpling Vegetable Soup

Total Time: 40 mins Preparation Time: 5 mins Cook Time: 35 mins

Ingredients

  • Servings: 4
  • 8 cups chicken broth (i used jameson bouillon)
  • 12 ounces frozen flat dumplings (or frozen noodles)
  • 3 carrots, cut into 1 inch chunks
  • 15 ounces mixed vegetables, drained
  • 1 -2 cup frozen mixed vegetables
  • 1 -2 cup frozen chopped spinach
  • 15 ounces light kidney beans, drained & rinsed (white beans could work too)
  • poultry seasoning
  • salt & pepper

Recipe

  • 1 bring broth to a boil. add remaining ingredients. simmer for at least 35 minutes. adjust ingredient amounts to your preferences.
