Double Baked Potatoes

Ingredients

- 4 large baking potatoes
- 2 tablespoons butter
- 1 onion, chopped
- 1 clove garlic, minced
- 3/4 cup milk
- salt & pepper
- 1/4 teaspoon nutmeg
- 8 ounces bacon, cooked crisp and crumbled
- 1 cup grated cheddar cheese
- 2 tablespoons chopped fresh chives or 2 tablespoons green onions
- 1 tablespoon butter, melted
Recipe
- 1 preheat oven to 400.
- 2 bake potatoes until tender (45- 60 min).
- 3 heat butter in skillet.
- 4 cook onion and garlic until tender but not brown.
- 5 stir in milk.
- 6 heat.
- 7 add salt& pepper& nutmeg.
- 8 cut off the top third of the potatoes.
- 9 scoop out potatoes leaving 1/4" shell.
- 10 beat potatoes til smooth.
- 11 mix in milk mixture.
- 12 stir in bacon, cheese and chives.
- 13 adjust seasoning if necessary.
- 14 spoon mashed potatoes back into potato skins.
- 15 brush top with melted butter.
- 16 before serving, bake in a preheated oven (400) for 15 minutes or until heated throughly.
