Double Baked Potatoes

Total Time: 1 hr 35 mins Preparation Time: 20 mins Cook Time: 1 hr 15 mins

Ingredients

  • Servings: 4
  • 4 large baking potatoes
  • 2 tablespoons butter
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 3/4 cup milk
  • salt & pepper
  • 1/4 teaspoon nutmeg
  • 8 ounces bacon, cooked crisp and crumbled
  • 1 cup grated cheddar cheese
  • 2 tablespoons chopped fresh chives or 2 tablespoons green onions
  • 1 tablespoon butter, melted

Recipe

  • 1 preheat oven to 400.
  • 2 bake potatoes until tender (45- 60 min).
  • 3 heat butter in skillet.
  • 4 cook onion and garlic until tender but not brown.
  • 5 stir in milk.
  • 6 heat.
  • 7 add salt& pepper& nutmeg.
  • 8 cut off the top third of the potatoes.
  • 9 scoop out potatoes leaving 1/4" shell.
  • 10 beat potatoes til smooth.
  • 11 mix in milk mixture.
  • 12 stir in bacon, cheese and chives.
  • 13 adjust seasoning if necessary.
  • 14 spoon mashed potatoes back into potato skins.
  • 15 brush top with melted butter.
  • 16 before serving, bake in a preheated oven (400) for 15 minutes or until heated throughly.
