Double Apple Corn Muffins

Ingredients
- 1 cup all-purpose flour
- 1 cup cornmeal
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 eggs, lightly beaten
- 2/3 cup unsweetened applesauce
- 1/2 cup milk
- 1/4 cup canola oil
- 1 large apple, peeled and finely chopped
Recipe
- 1 stir together the flour, cornmeal, sugar, baking powder and salt; set aside.
- 2 combine the eggs, applesauce, milk and oil; stir into dry ingredients, just until moistened.
- 3 add apple.
- 4 spoon into greased muffin pans, filling 2/3 full.
- 5 bake at 425f for 15 minutes.
- 6 cool muffins five minutes in pan before serving.
