Double Apple Corn Muffins

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • 1 cup all-purpose flour
  • 1 cup cornmeal
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 eggs, lightly beaten
  • 2/3 cup unsweetened applesauce
  • 1/2 cup milk
  • 1/4 cup canola oil
  • 1 large apple, peeled and finely chopped

Recipe

  • 1 stir together the flour, cornmeal, sugar, baking powder and salt; set aside.
  • 2 combine the eggs, applesauce, milk and oil; stir into dry ingredients, just until moistened.
  • 3 add apple.
  • 4 spoon into greased muffin pans, filling 2/3 full.
  • 5 bake at 425f for 15 minutes.
  • 6 cool muffins five minutes in pan before serving.
