Stuffed Baked Potato

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 1
  • 1 baking potato
  • grated zucchini (enough to equal amount of potato)
  • butter
  • salt and pepper, to taste
  • gruyere cheese, grated (enough to top potato)

Recipe

  • 1 bake potato until done; slice off top and scoop out, leaving shell intact.
  • 2 grate enough zucchini to equal the amount of potato and saute in butter.
  • 3 mix potato with zucchini and salt and pepper to taste.
  • 4 stuff potato shell with potato-zucchini mixture and top with grated cheese.
  • 5 bake at 450 degrees just long enough to reheat and melt cheese, about 5 minutes.
