Green Pea And Ricotta Fritters

Total Time: 23 mins Preparation Time: 8 mins Cook Time: 15 mins

Ingredients

  • 250 g frozen peas
  • 250 g ricotta cheese
  • 1 tablespoon chopped fresh thyme
  • grated parmesan cheese
  • salt and pepper
  • 115 g plain flour
  • 1 teaspoon baking soda
  • 250 ml ice water

Recipe

  • 1 mix the batter ingredients together.
  • 2 it should be lumpy, giving you a lighter batter.
  • 3 cook peas in boiling salted water.
  • 4 puree using blender or food processor.
  • 5 add the ricotta cheese and chopped fresh thyme.
  • 6 mix well.
