Lemon Butter Potatoes

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 3 potatoes, peeled, cut in half, sliced
  • 1 tablespoon extra light olive oil
  • 3 tablespoons butter
  • 2 teaspoons dried chives
  • 1/2 teaspoon salt
  • 2 tablespoons lemon juice
  • 1/2 teaspoon ground black pepper

Recipe

  • 1 heat oil in large frying pan.
  • 2 add potatoes when oil is hot.
  • 3 cover and cook 8-9 minutes, stirring 1-2 times.
  • 4 while potatoes cook, mix other ingredients in small saucepan and heat.
  • 5 add butter sauce.
  • 6 cook uncovered on med for 4-5 minutes.
  • 7 serve warm.
