Santorini Feta & Spinach Pizza

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • 1 pizza crust (homemade preferably or store bought)
  • 1/3 cup tomato sauce (homemade is best)
  • 4 ounces goat cheese
  • 8 ounces feta cheese
  • 1/3 cup mayonnaise (not low fat)
  • 3 garlic cloves
  • 1/4 cup kalamata olive (chopped)
  • 1/2 chili pepper (minced)
  • 1 teaspoon dried oregano
  • 1 small red onion (sliced into thin rings)
  • 1 cup baby spinach leaves
  • 1 cup mozzarella cheese (shredded)

Recipe

  • 1 prebake pizza crust in a 400f oven for 5 minutes.
  • 2 spread tomato sauce over crust.
  • 3 mix together the goat cheese, feta, mayo, garlic, olives, chili pepper & oregano.
  • 4 spread this mixture over the tomato sauce.
  • 5 scatter on the red onions, followed by the spinach.
  • 6 sprinkle on the mozzarella.
  • 7 enjoy with a glass of vino and pretend you are overlooking the blue waters of greece.
