Spinach, Mushroom, And Cilantro Quesadillas

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 18
  • 1 (10 ounce) package frozen chopped spinach (thawed)
  • 1 (8 ounce) package fresh sliced mushrooms
  • 1/4 cup cilantro, chopped
  • 1 teaspoon salt
  • 8 (8 inch) flour tortillas
  • mexican blend cheese

Recipe

  • 1 drain spinach well, pressing between paper towels.
  • 2 saute spinach and mushrooms in a large skillet 5 min or until tender.
  • 3 stir in cilantro and salt.
  • 4 spread spinach mixture evenly on half of each tortilla.
  • 5 sprinkle with cheese blend.
  • 6 wipe skillet clean.
  • 7 cook, tortilla side down, over med-high heat until lightly browned.
  • 8 fold tortilla over filling and serve immediately.
