Spinach, Mushroom, And Cilantro Quesadillas

Ingredients

- 1 (10 ounce) package frozen chopped spinach (thawed)
- 1 (8 ounce) package fresh sliced mushrooms
- 1/4 cup cilantro, chopped
- 1 teaspoon salt
- 8 (8 inch) flour tortillas
- mexican blend cheese
Recipe
- 1 drain spinach well, pressing between paper towels.
- 2 saute spinach and mushrooms in a large skillet 5 min or until tender.
- 3 stir in cilantro and salt.
- 4 spread spinach mixture evenly on half of each tortilla.
- 5 sprinkle with cheese blend.
- 6 wipe skillet clean.
- 7 cook, tortilla side down, over med-high heat until lightly browned.
- 8 fold tortilla over filling and serve immediately.
