Paul Newman's Creamed Spinach

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 lb fresh spinach
  • 1/8 teaspoon ground nutmeg
  • 3 ounces cream cheese, softened
  • 1/2 cup heavy cream

Recipe

  • 1 wash the spinach well and trim the stems.
  • 2 place the spinach in a pan with just the water that clings to the leaves.
  • 3 sprinkle with the nutmeg, cover the saucepan and steam for 2 to 3 minutes, until the leaves are wilted.
  • 4 drain any excess liquid.
  • 5 finely chop the spinach and return to the saucepan.
  • 6 beat the cream cheese in a small bowl until fluffy.
  • 7 gradually beat in the heavy cream until blended.
  • 8 stir the cream cheese mixture into the chopped spinach.
  • 9 cook over medium heat, stirring frequently, until blended and creamy.
  • 10 serve immediately.
  • 11 enjoy!
