Paul Newman's Creamed Spinach

Ingredients
- Servings: 4
- 1 lb fresh spinach
- 1/8 teaspoon ground nutmeg
- 3 ounces cream cheese, softened
- 1/2 cup heavy cream
Recipe
- 1 wash the spinach well and trim the stems.
- 2 place the spinach in a pan with just the water that clings to the leaves.
- 3 sprinkle with the nutmeg, cover the saucepan and steam for 2 to 3 minutes, until the leaves are wilted.
- 4 drain any excess liquid.
- 5 finely chop the spinach and return to the saucepan.
- 6 beat the cream cheese in a small bowl until fluffy.
- 7 gradually beat in the heavy cream until blended.
- 8 stir the cream cheese mixture into the chopped spinach.
- 9 cook over medium heat, stirring frequently, until blended and creamy.
- 10 serve immediately.
