Orange-mint Peas

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 2 tablespoons butter
  • 3 cups fresh early green peas (may substitute 3 c. frozen peas)
  • 1 tablespoon grated orange rind
  • 2 tablespoons fresh orange juice
  • 1 tablespoon chopped fresh mint
  • 1/2 teaspoon salt (to taste)
  • 1/4 teaspoon pepper (to taste)
  • orange rind twists

Recipe

  • 1 melt butter in a medium saucepan over medium heat; add in peas, rind, and juice.
  • 2 cook, stirring occasionally, 8-10 minutes or until thoroughly heated.
  • 3 stir in fresh mint, salt, and pepper.
  • 4 garnish with orange rind curls.
