Mixed Greens Frittata

Ingredients
- Servings: 4
- 4 teaspoons olive oil
- 2 garlic cloves, minced
- 8 cups mixed greens, torn in bite sized pieces (kale, chard, spinach)
- 2 eggs
- 4 egg whites
- 1/4 cup cottage cheese
- 1/4 cup grated parmesan cheese
- 1 tablespoon flour
- 1/2 teaspoon salt
Recipe
- 1 in a large broiler-proof nonstick skillet, heat 2 teaspoons of the oil over moderate heat. add garlic and cook for 2 minutes.
- 2 add the greens and cook, stirring often for 7 minutes or until very tender.
- 3 transfer the greens to a plate and wipe out the skillet.
- 4 in a food processor, combine the eggs, cottage cheese, parmesan, flour and salt.
- 5 add the remaining oil to the skillet and heat over moderate heat.
- 6 add the greens, pour the egg mixture over and cook without stirring for 10 minutes or until the eggs are set around the edges and slightly wobbly in the center.
- 7 preheat the broiler. broil the frittata 6 inches from the heat for 1 minute or until the center is just set.
