Mixed Greens Frittata

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 4 teaspoons olive oil
  • 2 garlic cloves, minced
  • 8 cups mixed greens, torn in bite sized pieces (kale, chard, spinach)
  • 2 eggs
  • 4 egg whites
  • 1/4 cup cottage cheese
  • 1/4 cup grated parmesan cheese
  • 1 tablespoon flour
  • 1/2 teaspoon salt

Recipe

  • 1 in a large broiler-proof nonstick skillet, heat 2 teaspoons of the oil over moderate heat. add garlic and cook for 2 minutes.
  • 2 add the greens and cook, stirring often for 7 minutes or until very tender.
  • 3 transfer the greens to a plate and wipe out the skillet.
  • 4 in a food processor, combine the eggs, cottage cheese, parmesan, flour and salt.
  • 5 add the remaining oil to the skillet and heat over moderate heat.
  • 6 add the greens, pour the egg mixture over and cook without stirring for 10 minutes or until the eggs are set around the edges and slightly wobbly in the center.
  • 7 preheat the broiler. broil the frittata 6 inches from the heat for 1 minute or until the center is just set.
