Easy And Quick Vegetarian Chili

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 2
  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 1/2 cup corn (optional)
  • 1 (15 ounce) can black beans, rinse & drain
  • 1 (15 ounce) can ranch style beans, undrained
  • 1 (15 ounce) can tomato sauce
  • 1 (1 ounce) package chili seasoning mix (mild or hot)
  • 1/2 cup water (or more)
  • sour cream (optional)
  • grated cheese (optional)

Recipe

  • 1 heat olive oil in a pot and cook onion and bell pepper until soft.
  • 2 add all other ingredients except those for topping.
  • 3 mix well.
  • 4 simmer for 15 minutes to an hour to blend flavors, adding water if necessary.
  • 5 this may also be cooked in a crockpot.
