Pink Lady Pie

Total Time: 20 mins Preparation Time: 15 mins Cook Time: 5 mins

Ingredients

  • Servings: 8
  • 1 1/2 cups finely crushed vanilla wafers
  • 1/4 cup soft butter
  • 1/4 cup sugar
  • 3/4 cup orange juice
  • 12 ounces marshmallows
  • 1 1/2 cups heavy cream, whipped
  • 1 (10 ounce) package frozen raspberries, thawed

Recipe

  • 1 blend the vanilla wafers, butter, and sugar together and press firmly into a 9-inch pie plate. bake at 375°f for 5 minutes. cool and chill.
  • 2 heat orange juice in a double boiler. add marshmallows and stir until melted.
  • 3 cool mixture and chill in the refrigerator until partially set.
  • 4 after it is partially set, fold in the whipped cream and raspberries.
  • 5 pour filling into crust.
  • 6 top with extra whipped cream if desired.
