Pink Lady Pie

Ingredients

- 1 1/2 cups finely crushed vanilla wafers
- 1/4 cup soft butter
- 1/4 cup sugar
- 3/4 cup orange juice
- 12 ounces marshmallows
- 1 1/2 cups heavy cream, whipped
- 1 (10 ounce) package frozen raspberries, thawed
Recipe
- 1 blend the vanilla wafers, butter, and sugar together and press firmly into a 9-inch pie plate. bake at 375°f for 5 minutes. cool and chill.
- 2 heat orange juice in a double boiler. add marshmallows and stir until melted.
- 3 cool mixture and chill in the refrigerator until partially set.
- 4 after it is partially set, fold in the whipped cream and raspberries.
- 5 pour filling into crust.
- 6 top with extra whipped cream if desired.
