Lemon Curd

Ingredients
- 3 lemons
- 8 tablespoons butter
- 1 cup sugar
- 3 eggs
Recipe
- 1 zest the lemons and juice the lemons.
- 2 combine the zest, juice, butter, and sugar and place in a small saucepan over low heat.
- 3 cook, stirring occasionally, until the sugar dissolves. beat the eggs and add to the mixture.
