Easy Almond Roca Toffee

Total Time: 50 mins Preparation Time: 30 mins Cook Time: 20 mins

Ingredients

  • 1 cup slivered almonds
  • 1 cup butter (do not substitute margarine)
  • 1 cup sugar
  • 1/3 cup water
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 12 ounces milk chocolate chips
  • 1 cup finely ground walnuts

Recipe

  • 1 line a cookie sheet with foil and spray it with non-stick cooking spray.
  • 2 place almonds in a single layer on cookie sheet.
  • 3 cook butter, sugar, water, vanilla and salt in a heavy saucepan over high heat, stirring mixture constantly, 15-18 minutes or until a candy thermometer registers 310°f.
  • 4 remove from heat and immediately pour over almonds (do not scrape the pan).
  • 5 sprinkle immediately with chocolate morsels and spread evenly to 1/2 inch from sides.
  • 6 sprinkle with ground walnuts.
  • 7 let stand until firm.
  • 8 break into small pieces and store in an airtight container.
  • 9 (the toffee mixture will not coat the entire baking sheet).
