Double Chocolate Mousse Cake

Ingredients

- 2 eggs
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup vegetable oil
- 1/2 cup buttermilk
- 2 1/4 cups all-purpose flour
- 1/2 cup cocoa powder
- 1 1/2 teaspoons baking soda
- 1 1/2 teaspoons baking powder
- 1 cup boiling water
- 1/2 cup milk chocolate chips
- 1 1/2 cups whipping cream
- 2 tablespoons icing sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups milk chocolate chips, melted and cooled
Recipe
- 1 to make the cake, preheat the oven to 350 degrees f and grease two 9" cake pans.
- 2 beat the eggs, sugar and vanilla until combined.
- 3 add the oil and buttermilk, then add the dry ingredients.
- 4 mix until well combined.
- 5 carefully fold in the boiling water until the batter is smooth and the mixture is quite thin.
- 6 pour into the prepared pans.
- 7 sprinkle with the chocolate chips.
- 8 bake in the preheated oven for 25 to 30 minutes or until a toothpick inserted in the centre of the cake comes out clean.
- 9 cool in the pans for 10 minutes.
- 10 remove from the pans and cool on a wire rack.
- 11 to make the mousse, whip the cream in a large bowl until it is thick and holds its shape.
- 12 beat in the icing sugar and vanilla.
- 13 fold in the melted and cooled chocolate chips.
- 14 do not overmix; the mousse should have a rippled effect.
- 15 to assemble, place one layer of cake on a serving platter.
- 16 spread with about 1 cup of the mousse.
- 17 place the second layer on top.
- 18 ice with the remaining mousse.
- 19 refrigerate until ready to eat.
