Double Chocolate Mousse Cake

Ingredients

  • Servings: 16
  • 2 eggs
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup vegetable oil
  • 1/2 cup buttermilk
  • 2 1/4 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 1/2 teaspoons baking soda
  • 1 1/2 teaspoons baking powder
  • 1 cup boiling water
  • 1/2 cup milk chocolate chips
  • 1 1/2 cups whipping cream
  • 2 tablespoons icing sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups milk chocolate chips, melted and cooled

Recipe

  • 1 to make the cake, preheat the oven to 350 degrees f and grease two 9" cake pans.
  • 2 beat the eggs, sugar and vanilla until combined.
  • 3 add the oil and buttermilk, then add the dry ingredients.
  • 4 mix until well combined.
  • 5 carefully fold in the boiling water until the batter is smooth and the mixture is quite thin.
  • 6 pour into the prepared pans.
  • 7 sprinkle with the chocolate chips.
  • 8 bake in the preheated oven for 25 to 30 minutes or until a toothpick inserted in the centre of the cake comes out clean.
  • 9 cool in the pans for 10 minutes.
  • 10 remove from the pans and cool on a wire rack.
  • 11 to make the mousse, whip the cream in a large bowl until it is thick and holds its shape.
  • 12 beat in the icing sugar and vanilla.
  • 13 fold in the melted and cooled chocolate chips.
  • 14 do not overmix; the mousse should have a rippled effect.
  • 15 to assemble, place one layer of cake on a serving platter.
  • 16 spread with about 1 cup of the mousse.
  • 17 place the second layer on top.
  • 18 ice with the remaining mousse.
  • 19 refrigerate until ready to eat.
