Smashed Potatoes

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • Servings: 2
  • 1 1/4 lbs red potatoes
  • 1/2 cup chopped onion
  • 2 cloves garlic, quartered
  • 1/3 cup milk
  • 2 teaspoons coarse ground mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Recipe

  • 1 cut potatoes into 1 inch cubes (do not peel).
  • 2 combine potatoes, onion and garlic in a medium saucepan.
  • 3 add enough water to cover; bring to a boil.
  • 4 reduce heat, cover and cook 20 minutes or until potatoes break apart easily when pierced with a fork.
  • 5 drain potatoes, and return to saucepan.
  • 6 add remaining ingredients and coarsely mash, leaving some potatoes in chunks.
