Smashed Potatoes

Ingredients

- 1 1/4 lbs red potatoes
- 1/2 cup chopped onion
- 2 cloves garlic, quartered
- 1/3 cup milk
- 2 teaspoons coarse ground mustard
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Recipe
- 1 cut potatoes into 1 inch cubes (do not peel).
- 2 combine potatoes, onion and garlic in a medium saucepan.
- 3 add enough water to cover; bring to a boil.
- 4 reduce heat, cover and cook 20 minutes or until potatoes break apart easily when pierced with a fork.
- 5 drain potatoes, and return to saucepan.
- 6 add remaining ingredients and coarsely mash, leaving some potatoes in chunks.
