Quinoa With Oyster Mushrooms And Adzuki Beans

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 tablespoon olive oil
  • 1/2 cup thinly sliced carrot
  • 3 stalks green onions, chopped
  • 1/2 ounce dried oyster mushroom (1/4 cup)
  • 2 cups vegetable broth or 2 cups water
  • 2 cups cooked adzuki beans, drained and rinsed
  • 1 cup quinoa, washed and drained
  • salt, to taste
  • ground black pepper, to taste

Recipe

  • 1 crushed the oyster mushrooms slightly and remove the tough stems.
  • 2 sauté carrots, onions, and mushrooms for 3 minutes.
  • 3 add broth, beans and quinoa. season to taste with salt and pepper. bring to a boil.
  • 4 reduce heat to low and simmer for 15 to 20 minutes or until all liquid is absorbed. fluff with a fork.
