Quinoa With Oyster Mushrooms And Adzuki Beans

Ingredients

- 1 tablespoon olive oil
- 1/2 cup thinly sliced carrot
- 3 stalks green onions, chopped
- 1/2 ounce dried oyster mushroom (1/4 cup)
- 2 cups vegetable broth or 2 cups water
- 2 cups cooked adzuki beans, drained and rinsed
- 1 cup quinoa, washed and drained
- salt, to taste
- ground black pepper, to taste
Recipe
- 1 crushed the oyster mushrooms slightly and remove the tough stems.
- 2 sauté carrots, onions, and mushrooms for 3 minutes.
- 3 add broth, beans and quinoa. season to taste with salt and pepper. bring to a boil.
- 4 reduce heat to low and simmer for 15 to 20 minutes or until all liquid is absorbed. fluff with a fork.
