Double Chocolate Mint Chip Cookies

Ingredients

- 1 1/2 cups mint chocolate chips
- 1/2 cup brown sugar, firmly packed
- 1 1/4 cups unbleached flour
- 1/4 cup granulated sugar
- 3/4 teaspoon baking soda
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 large egg
- 1/2 cup butter, softened
- 1/2 cup nuts, chopped
Recipe
- 1 preheat oven to 375°f.
- 2 melt over hot (not boiling) water, 3/4 cup of the mint-chocolate chips; stir until smooth.
- 3 remove from heat; cool to room temperature.
- 4 in a small bowl, combine flour, baking soda and salt; set aside.
- 5 in a large bowl, combine butter, brown sugar, sugar, and vanilla extract; beat until creamy.
- 6 add melted chips and egg; beat well.
- 7 gradually blend in the flour mixture.
- 8 stir in remaining 3/4 cup of mint-chocolate chips and nuts.
- 9 drop by rounded tablespoonfuls onto ungreased cookie sheets.
- 10 bake at 375° for 8-10 minutes.
- 11 allow to stand 2-3 minutes; remove from cookie sheets.
- 12 cool completely on wire racks.
