Salsa Criolla - Peruvian Onion, Pepper & Lime Salsa

Ingredients
- Servings: 3
- 2 red onions, sliced in very thin half moons
- 1 -2 aji bell peppers or 1 -2 jalapeno pepper, sliced into very thin matchsticks
- 1 tablespoon chopped cilantro or 1 tablespoon parsley
- 2 tablespoons lime juice
- 1 tablespoon vinegar
- salt and pepper
Recipe
- 1 soak the onions in salt water for 10 minutes. drain and let dry.
- 2 mix onion with the rest of the ingredients. cover with plastic wrap and let marinate at room temperature for 30 minutes before serving.
- 3 store in refrigerator for up to 2 days.
