Pesto Mashed Potatoes

Ingredients
- Servings: 6
- 2 1/2 lbs baking potatoes
- 6 tablespoons butter or 6 tablespoons margarine
- 1/2 cup sour cream
- 1/3 cup pesto sauce, your favorite store bought
- salt
- pepper
Recipe
- 1 peel and chop potatoes. place in large pot and fill with cold water until potatoes are just covered.
- 2 bring to a boil and cook until tender (approx 15-20 minutes) until fork tender, drain, completely.
- 3 transfer potatoes to a large bowl and start to mash.
- 4 stir in butter, sour cream and pesto sauce.
- 5 season with salt and pepper.
- 6 serve warm.
