Pesto Mashed Potatoes

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 2 1/2 lbs baking potatoes
  • 6 tablespoons butter or 6 tablespoons margarine
  • 1/2 cup sour cream
  • 1/3 cup pesto sauce, your favorite store bought
  • salt
  • pepper

Recipe

  • 1 peel and chop potatoes. place in large pot and fill with cold water until potatoes are just covered.
  • 2 bring to a boil and cook until tender (approx 15-20 minutes) until fork tender, drain, completely.
  • 3 transfer potatoes to a large bowl and start to mash.
  • 4 stir in butter, sour cream and pesto sauce.
  • 5 season with salt and pepper.
  • 6 serve warm.
