Smashed Leek Potatoes

Ingredients

- 6 yukon gold potatoes
- 3 tablespoons butter or 3 tablespoons margarine
- 2 leeks, and light green parts only, thinly sliced
- 3/4 teaspoon salt
- 3/4 teaspoon pepper
- 1 pinch dried thyme
- 1 1/3 cups buttermilk
Recipe
- 1 scrub potatoes.
- 2 cut into 2 inch cubes.
- 3 in large saucepan of boiling salted water,cover and cook potatoes until tender,about 15 minutes.
- 4 drain and return to pot.
- 5 meanwhile,in a small skillet,melt 1 tbsp butter over medium heat;fry leeks.
- 6 add a pinch of salt,pepper and thyme to leeks.
- 7 fry until tender,about 5 minutes.
- 8 add buttermilk,remaining butter,salt & pepper to potatoes;smash with potato masher until smooth with a few large pieces remaining.
- 9 stir in leeks mixture.
