Smashed Leek Potatoes

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 8
  • 6 yukon gold potatoes
  • 3 tablespoons butter or 3 tablespoons margarine
  • 2 leeks, and light green parts only, thinly sliced
  • 3/4 teaspoon salt
  • 3/4 teaspoon pepper
  • 1 pinch dried thyme
  • 1 1/3 cups buttermilk

Recipe

  • 1 scrub potatoes.
  • 2 cut into 2 inch cubes.
  • 3 in large saucepan of boiling salted water,cover and cook potatoes until tender,about 15 minutes.
  • 4 drain and return to pot.
  • 5 meanwhile,in a small skillet,melt 1 tbsp butter over medium heat;fry leeks.
  • 6 add a pinch of salt,pepper and thyme to leeks.
  • 7 fry until tender,about 5 minutes.
  • 8 add buttermilk,remaining butter,salt & pepper to potatoes;smash with potato masher until smooth with a few large pieces remaining.
  • 9 stir in leeks mixture.
