Easy Chicken Pot Pie Casserole

Ingredients
- 1 1/2 lbs chicken breasts, cut into 1-inch cubes (boneless, skinless)
- 1 (16 ounce) frozen mixed vegetables, thawed
- 1 3/4 cups chicken broth
- 1 (10 3/4 ounce) can condensed cream of chicken soup
- 1 (10 3/4 ounce) can condensed cream of broccoli soup, or
- 1 (10 3/4 ounce) can condensed cream of mushroom soup
- 2 cups bisquick baking mix
- 1 1/2 cups milk
- 1/2 cup butter, melted (1 stick)
- poultry seasoning, to taste (optional)
Recipe
- 1 preheat oven to 350 degrees.
- 2 coat 9"x13" baking dish with cooking spray.
- 3 in a large bowl, whisk together broth and the 2 cans of soup and poultry seasoning if using. add chicken chunks and mixed veggies, stir thoroughly. pour into baking dish.
- 4 mix together bisquick,milk and melted butter, until smooth. spoon over chicken mixture.
- 5 bake 60 to 65 minutes or until top is golden.
