Easy Chicken Pot Pie Casserole

Total Time: 1 hr 20 mins Preparation Time: 20 mins Cook Time: 1 hr

Ingredients

  • 1 1/2 lbs chicken breasts, cut into 1-inch cubes (boneless, skinless)
  • 1 (16 ounce) frozen mixed vegetables, thawed
  • 1 3/4 cups chicken broth
  • 1 (10 3/4 ounce) can condensed cream of chicken soup
  • 1 (10 3/4 ounce) can condensed cream of broccoli soup, or
  • 1 (10 3/4 ounce) can condensed cream of mushroom soup
  • 2 cups bisquick baking mix
  • 1 1/2 cups milk
  • 1/2 cup butter, melted (1 stick)
  • poultry seasoning, to taste (optional)

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 coat 9"x13" baking dish with cooking spray.
  • 3 in a large bowl, whisk together broth and the 2 cans of soup and poultry seasoning if using. add chicken chunks and mixed veggies, stir thoroughly. pour into baking dish.
  • 4 mix together bisquick,milk and melted butter, until smooth. spoon over chicken mixture.
  • 5 bake 60 to 65 minutes or until top is golden.
