- 1 cup pinto beans, drained and mashed
- 1 cup dark corn syrup
- 1 cup white sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 3 egg, beaten
- 1 (9 inch) unbaked pie crust

- preheat oven to 375 degrees f (190 degrees c.)
- in a large bowl, combine beans, corn syrup, sugar, cornstarch and vanilla. beat in the eggs. pour into pie crust.
- bake in the preheated oven for 30 minutes, or until filling is set and crust is golden brown.
