Ingredients

- 1 (400 g) can of any white beans (or chickpeas)
- 1 cup stock (vegetable or chicken)
- 2 cups water
- 1 cup onion (chopped finely)
- 1 cup carrot (diced)
- 1/2-1 tablespoon lemon juice
- 1/2 teaspoon black pepper
Recipe
- 1 combine beans, stock, water, onion and carrot and cook for 15minutes.
- 2 add black pepper and lemon juice and cook a further 15-20minutes.
- 3 serve.
